The broth is the star — a deeply fragrant, slow-simmered herbal bone broth that is beefy, slightly sweet, and layered with the aroma of star anise, cloves, and dried citrus peel.
Generous cuts of beef brisket, beef tendon, and tripe are placed over your choice of noodle — thick yellow mee, flat kway teow, or rice vermicelli — and the whole bowl arrives steaming and satisfying in every sense.
